On this Nottingham cookery course we offer quick easy solutions to help you get the best out of your veg box [or weekly vegetable shopping] and to avoid wasting food.
We know that not everyone wants complicated cooking and that having to keep 100 different spices in the cupboard is a bind - so we'll keep it simple but it will still be full of flavour!
What will it be like? - having a surprise veg box is like the quick elimination round on Masterchef - a box of mystery ingredients, a pile of recipe options to choose from and you can put together a feast of snacks, soups, vegetable main courses, side dishes and salads!
Sample Menu Items - the menu for each course [obviously] depends on what arrives in the box and changes with the seasons but we will aim to cook a large range of these types of recipes:
- Homemade stocks and delicious seasonal vegetable soups
- Winter Vegetable Bakes - using veg, nuts and seeds
- Moroccan tajines and easy one-pot meals
- Pasta dishes
- Healthy snacks
- Sauces
- Other seasonal ingredients will also be incorporated into the dishes where appropriate
- This course is heavily vegetarian based - meat/fish/seafood will be minimal - the focus is on the vegetables. The menu will also be adapted according to season and balanced to suit all course participants as far as possible.

Vegetarians - this course is suitable for you if you do not mind a small amount of meat being prepared and served - you would not need to prepare it though. Vegetarian dates will be added if enough Vegetarians make an enquiry - so get in touch!
THE COOKING CLASS
At this class we will go through the contents of the latest weekly veg box arrival and make sure that we understand what sort of veg we are dealing with, how to tell if it is at its best, the tastiest ways to cook individual items and what other seasonal ingredients to pair them with.
We will also look at ways to use the veg in dishes that are full of flavour - not just by steaming it and putting it on the plate beside meat/poultry. The focus will be on simple but tasty dishes that can be incorporated into busy lives. We will also cover menu planning, storage of veg and what to do if you simply don't have time to use it all before it goes off! Nothing goes to waste and no one has to eat things that they don't like if you know how to plan your way out of your veg box!
We will work through a variety of recipes to use the veg in the easiest way without compromising on taste or flavour.
Included is a full lunch - consisting of the resulting dishes cooked. A recipe pack is yours to take away alongside your own fresh veg box to get you started [this is included as a small sample box with no further committment to a scheme].
This course is also useful for anyone who needs to learn some background cooking and knife skills.
