Moroccan Cookery in Nottingham!

Moroccan tajine cooking sends out sensational smells from the kitchen and is guaranteed to go down a treat! On this course we will cook couscous the Moroccan way!

Moroccan cooking ranges from French-influenced pastries such as Briouates and Gazelles Horns to slow-cooked Tajines, couscous and Harira [Moroccan Soup]. Typical ingredients include fresh goat's cheese [we tasted the best goat's cheese salad in the hills of Chefchaouen in northern Morocco], lamb, beef, chicken and fish and fresh seasonal vegetables.

Flavours include the combination of sweet and spice, herbs such as parsley and coriander and spices like cumin, cinnamon, turmeric and saffron.

We will use genuine tajines purchased in northern Morocco. During our trip there we also attended a Marrakesh cookery school to find out more about this interesting style of cuisine.

For the full day Moroccan Cookery course we will look at a range of Moroccan recipes including outdoor tajine cooking [season/weather dependent] and couscous.
