Chef / Knife Skills Cookery Course
This chef skills course is designed to improve your knife skills and how you present food. Additional dates for progression of skills will be added according to demand. This gives you the option to develop your skills over a period of time.
Across a series of courses we will cover dicing, slicing, chopping, shredding, batons, julienne, mirepoix, chiffonade and much, much more. There will be an opportunity to fillet fish [and skin the fillets], prepare different seafood, bone out fish, and joint/spatchcock poultry individually on some dates [actual skills covered on each date depends on timing and produce availability] - please speak to Sarah on 0115 9160861 or send an email if there is something specific that you wish to learn
We will cover a range of techniques commonly used in food preparation. Once you have the techniques, you will then be able to practise and build up speed. All the appropriate knives for learning are supplied for use on the course, or you may bring your own if you have them. If you would like advice on which knives to purchase then it is a good idea to come and try ours first to see which type is most appropriate for you.
We will prepare a series of quick recipes for our lunch as part of the day courses and to sample at the end of evening classes - but the main focus is on improving your background skills in the kitchen.
Over a series of skills-based courses we will look at different cuts of meat, various ways of presenting vegetables and also garnishing.

Please note that we teach knife skills across all our courses but that this course is specifically for those who wish to concentrate on this area.
