Full Day Fish Cookery Class
The range of recipes that form these cookery days cover different techniques for cooking fish, seafood and shellfish - such as grilling, frying, steaming, baking.
Total beginners should ideally complete our Back to Basics course before moving onto the Fabulous Fish cookery course in order to get the most from this course. Please discuss suitability of courses with us if you do not cook from scratch regularly.

The original Fabulous Fish course is aimed at those people who cook regularly and have tried their hand at cooking fish/preparing some seafood already but have no formal skills. It is aimed at those who may not have been on cookery courses before. We usually fillet a flatfish, skin the fillets, pinbone and prepare round fish for cooking. We also prepare a variety of seafood from scratch such as prawns/squid/mussels [dependent on species available on the day and any known preferences of the group] Recipes for using seafood in different ways are covered as well as how to tell if fish is cooked properly. This course is also useful for learning some background food preparation/knife skills as well as polishing those skills you may already have.
Fish Advanced is run occasionally for those who have completed the Fabulous Fish course at Courses for Cooks or at least one other course here. It is expected on this course that you are able to demonstrate good knife skills already [so do not need us to teach you these] as well as the ability to complete more complex recipes from scratch properly with minimal guidance. Recent courses have featured crab, preparation and cooking of octopus and a demonstration of how to de-bone and stuff a sea bass as well as a technique for curing seafood. The focus on this course is on new, more advanced preparation skills for those who have taught skills.
There are opportunities to fillet fish [and skin fillets], de-bone whole fish and undertake many other skills individually during these 2 courses as well as to prepare other creatures such as squid, mussels, prawns, clams, crab, octopus and scallops. Each person will undertake many preparation skills as well as some cooking of recipes.
The species covered on each date is dependent on what is in season/available at the time of the course. The skills element is available to those who wish to try this - handling all the different creatures is not compulsory.

Previous recipes featured on these courses have included a selection of the following Red Mullet with Cherry Tomato and Taragon Dressing, Thai Steamed Fish Rolls Sea Bass in Chermoula,
Moroccan Mackerel, Sesame Coated Goujons - delicious with Sweet Chilli Sauce, Mussels in Harissa Salsa, Baked Cajun Crab, Pollack Caramba [a Mexican Fish One Pot Dish], Prawn and
Chilli Pate, John Dory with Light Curry Sauce, Gilt Head Bream with Oriental "Slaw", Squid Salad with Lemon and Sumac, and Smoked Mackerel Pate. The menu is always subject to
seasonal availability and what is fresh on the day. We also consider what fish is considered to be sustainable at the time of the course.

Hi Sarah, Just wanted to say how much Sarah and I enjoyed Saturday. I think that we both feel much more confident with fish now (although perhaps need a little more practice with filleting!). The recipes were all delicious and remarkably easy so I'm sure we will both be trying them out at home very soon. I have taken three priceless things from this course; confidence, knowledge and inspiration. The course eqipped me with the confidence to cook any fish, I have started trying fish that wasn't even on the course! A massive amount of knowledge was gained, much of what went beyond fish, such as tasting and the different intensity of flavours of produce such as lemon and chillies. Most of all, I have been inspired to cook fish all the time, I have started eating 4-5 portions a week! Abdulkadir.

I have to admit to being a bit nervous when I arrived at Sarah's house but the warm and enthusiastic welcome I received put me at ease and set the tone for the day. The atmosphere was relaxed and Sarah was an inspiring teacher. It's a very hands on course with everyone mucking in and helping. I felt I could ask Sarah anything and have a go at everything. The recipes were clear and very tasty nothing to complicated. One thing which really struck me was the fantastic organisation which had gone into the day we were never just standing about wondering what to do everything we need was ready for us and Sarah's partner Jon was a dab hand at the washing up. Hi Sarah. Just to let you know that I had a fantastic time on Saturday on the fabulous fish course. Thank you for being so patient - I had never cooked fillets of fish from scratch before - let alone fillet the fish myself! You have given me a greater understanding of the importance of fresh fish, and how to identify fresh fish, as well as some really easy- yet tasty recipe ideas that can be easily achieved - even to the complete novice. I still can hardly believe that we managed to cook and eat all 7 courses during the day! The fish recipe pack with all the ingredients and list of places to buy the equipment used on the day that you gave to us all at the end of the day will be handy to recreate all the lovely dishes for my friends and family.
