DUKE OF EDINBURGH - Skills Section - Cookery
The Courses For Cooks "Learn To Cook" series of courses are designed to meet the criteria for the Duke of Edinburgh Skills Section. If your son/daughter wants to learn to cook as their new skill, then this is ideal.

- Every student will undertake all appropriate cookery techniques and skills
- Takes place in a large, fully equipped kitchen
- Small groups [4 per chef/teacher]
- Background skills taught at the cookery school
- Work is set to be completed at home
- All produce, lunches, use of equipment and tuition is included
- £90.00 per student per day - payable at time of booking to secure places
Each Duke of Edinburgh course takes place over a period of 3-12 months [students must show sustained interest in their chosen activity for at least 3-12 months dependent on the stage they are at within the award].
For the Duke of Edinburgh option, students must complete days 1 and 2 initially, then complete set work at home, before returning to complete the course a few months later.
We will equip the students with initial background skills in the preparation of easy meals and ingredients. They will then be set homework to complete before returning for their follow up day. The homework consists of planning and cooking meals and also conducting research into food produce costs and seasonality of ingredients.
The complete course must be booked to complete the requirements for the Duke of Edinburgh Skills Section and all parts must be completed to obtain logbook sign off
Parents are asked to complete a booking form/questionnaire on application so that I can assess the level of capability of the students and make sure that varying levels of capability are accommodated.
GROUP BOOKINGS ACCEPTED. SUNDAY DATES AND GROUP RATES AVAILABLE FOR GROUPS OF 4-8
Over this cookery course we will cover the Award requirements from the following criteria over a series of day courses:
- Safe use of a range of equipment
- Safe and appropriate use of different knives
- Creative and imaginative table setting
- Understanding basic nutrition/balanced diets
- Planning and costing of a balanced menu for a family of 4 for a day - focussing on the need for different foods to be included to give protein/fibre/vitamins/minerals and sugars
- Different techniques for cooking [steaming/chargrilling/roasting/pressure cooking]
- Cleaning and maintenance of kitchen equipment including knife sharpening
- Correct storage of foods to maintain freshness and avoid cross-contamination
- Advantages/disadvantages of convenience foods
- Preparation and cooking of simple recipes
- Safe and effective outdoor cooking
- Cooking for Expeditions
- Vegetarian Cookery including pulses, rice or wholemeal foods
- Related research / use of recipe books and other resources
The outdoor element of this will be covered in more detail if there is sufficient demand for us to run a date at our outdoor cooking shelter at Trinity Farm - please enquire if this is of interest.
