Who teaches the cooking courses?

I work with food every day and rigorously test every recipe that you will do here several times. I have undertaken a lot of specialist training at many different establishments and can now pass on a variety of insights into chef skills and cookery techniques. I have been teaching themed cookery courses since early 2006.
I have a qualification in Cordon Bleu Cuisine and I taught my original Cooking with Chillies course at The Manor School of Fine Cuisine for a year. This is the reference that Claire Tuttey [Nottingham School of Cookery and The Manor School of Fine Cuisine] wrote about me in July 2006 when I was running my chilli cookery course at her school: Sarah teaches efficiently, happily and is always well prepared. I founded The Manor School of Fine Cuisine 19 years ago and have never let anyone use the school to run courses of their own, such is my trust in Sarah. I wish her great success with her courses in the future.
I left the Manor School of Fine Cuisine to set up my own informal, small [now very busy] cookery school in October 2006, running my chilli cookery course alongside some new cookery courses from my own large kitchen. The course list has now expanded due to the large number of people who repeatedly return here.
My enthusiasm for cooking with unusual ingredients began when I attended two cookery schools while I was on holiday in New Orleans. After cooking Shrimp Etouffee and New Orleans Gumbo I moved onto spending time at a chocolate academy, Rick Stein's Seafood School and also La Maison Arabe, a cookery school in Marrakesh [to gain a better understanding of authentic Moroccan cuisine] I have completed a Food Smoking course, a soft cheesemaking course, more chocolate courses and also 7 cooking classes in India [north and south] I have developed a range of new courses using the skills gained from this varied training.
I have trained in breadmaking with French baker, Richard Bertinet [author of "Dough" and "Crust"] and studied at the Krua Thai Cookery School to develop my skills in authentic Thai cuisine.
I hold a City and Guilds Certificate in "Delivering Learning" gained at Castle College in Nottingham - where I have also undertaken cookery demonstration lessons for teenagers and other students. Prior to working in cooking I had a number of senior managerial jobs in training and development and also in planning and project management. I have been able to transfer these skills to developing cookery courses and teaching cookery.
My own large, fully equipped, home kitchen is the venue for these cooking classes - we are now called "Courses for Cooks". I am ably assisted by my partner and other keen cooks and work experience students.
I occasionally work as a freelance writer, specialising in travel, food, and articles with an environmental slant. I have contributed to a number of national and local magazines.
I have written articles about chilli festivals and my travels for magazines such as Destination France Magazine, Holiday Cottages Magazine, Adventure Travel Magazine and an in-flight magazine.
