Who teaches the cooking courses?

I have a certificate in Cordon Bleu Cuisine and I taught my original Cooking with Chillies course at The Manor School of Fine Cuisine for a year. I left there to set up my own informal, small [but now very busy] cookery school in 2006, running my chilli cookery course alongside a wide range of new cookery courses from my own large, home kitchen.
My enthusiasm for cooking with unusual ingredients began when I attended two cookery schools while I was on holiday in New Orleans. Since then I have spent time at a UK chocolate academy, Rick Stein's Seafood School and a cookery school in Marrakesh [to gain a better understanding of authentic Moroccan cuisine]. I have developed a range of new courses using the skills gained from this varied training.
I have trained in breadmaking with French baker, Richard Bertinet [author of "Dough" and "Crust"], so you might see a homemade French Baguette or Fougasse lurking somewhere on my table to accompany your meal.
I have also trained at the Krua Thai Cookery School to develop my skills in authentic Thai cuisine.
I hold a City and Guilds Certificate in "Delivering Learning" gained at Castle College in Nottingham - where I have also undertaken cookery demonstration lessons for teenagers and other students. Prior to working in cooking I had a number of senior managerial jobs in training and development and also in planning and project management. I have been able to transfer these skills to developing cookery courses and teaching cookery.
My own home kitchen is the venue for these cooking classes - we are now called "Courses for Cooks". I am ably assisted by my partner and several keen cooks and work experience students.
I occasionally work as a freelance writer, specialising in travel, food, and articles with an environmental slant. I have contributed to a number of national and local magazines.
I have written articles about chilli festivals and my travels for magazines such as Destination France Magazine, Holiday Cottages Magazine, Adventure Travel Magazine and an in-flight magazine.
If you are local to Nottingham then you may have seen my work in past issues of Living for Tomorrow - a local sustainability magazine produced by Nottinghamshire County Council.
