The Back to Basics cookery courses are designed for those who wish to learn to cook fresh food properly. These full day cookery courses are also great if you simply want some new ideas and the chance to ask some cookery-based questions.

This course suits people who start cooking later in life, students who want to learn some kitchen skills as well as anyone wishing to expand their culinary repertoire. The dishes are ideal for no-fuss dinner parties or for cooking for your family.

We cover cooking techniques for sauces, vegetable, fish and meat cookery as well as background knife skills.

On this day you will learn how to go about making recipes properly. This course is suitable for people of all ages who want to learn to cook more effectively.

The final menu depends on season and also fresh produce availability but the types of recipe that we will cover are: fillets of fish in sauces and marinades, slow-cooked one-pot meals, roasted meat/poultry recipes and carbohydrate and vegetable accompaniments.

This course usually has a varied menu according to season. The menu will feature a selection of these sorts of dishes: Quick Seasonal Risotto [different seasonal flavourings apply], Marinated Fillets of Fish, Dressed Salads, Chicken with Various Sauces and Italian Meatballs with Fresh Tomato Sauce followed by a recipe for easy Homemade Seasonal Ice Cream or Sorbet for dessert.

If you are a good cook who wants to learn some new ideas or to back up your cooking abilities with some increased, more formal, knowledge and skills then this is ideal for you. If you find that you are never sure whether something is cooked properly or feel that you always overcook your food then this course will help to solve these problems. If you want to understand which recipes and foods you can freeze or prepare ahead - then we will help you here as well. Understanding how to go about preparing food that is full of flavour without having to stock too many ingredients is also part of this day. We will also briefly cover how to plan to eat a balanced diet.
