This one-day Outdoor African cookery course in Nottingham is designed for anyone wanting to learn more about exciting outdoor cooking. This is a seasonal course that will only take place between May and September each year and the venue is our outdoor shelter at Trinity Farm Organics, near Nottingham.

Ideal for couples, groups of friends, or come on your own and meet some like-minded people!

If you are a camping enthusiast or simply like outdoor cookery or unusual dishes - this course is definitely for you!

Spiced Bake Pot Bread!

As well as using a charcoal grill we focus on using South African Potjie pots and learn how to look after and get the best out of this versatile cast iron cooking pot - through roasting, slow-cooking and baking.

We also use authentic Moroccan Tajines for slow-cooked recipes that are full of flavour. These sit alongside fresh fish cooked on the coals - it promises to be a feast!

This is a real outdoor course of African-inspired recipes - no fancy kitchens or dining tables - just a grill, some potjie pots, tajines and coals!

Seating is tree stumps [you cook and then wander about grazing, from cooking pot to tajine rather than sit around all day] and loos are camping-style - please note the facilities are basic but comfortable!

This course includes loads of hands on cookery as well as ample time to enjoy eating the ongoing feast and socialise in informal surroundings.

To give you an idea.......recipes for this course will feature a large selection of the following: North African Merguez, Mozambique Spiced Prawns, for vegetarians we have Chargrilled Vegetables with Ethiopian Berbere, Chefchaouen Goat's Cheese Salad, Senegal Sweet Potato Stew, Chickpeas with Dukkah and our own Zanzibar Pizza for Vegetarians

For fish recipes - Ghanaian Fish with Ginger, Chilli and Garlic or Tunisian Spiced Bream. Our our meat and poultry dishes have included South African Bobotie, a Lamb Tajine with Sweet Potato or Chicken and Butternut Squash Tajine and Merguez Kebabs.

Dessert is usually Banoffee Pie!

The menu changes according to seasonal produce available and our whim - but it will always be tasty and cooked totally outdoors!
