These pictures show a previous African Outdoor Cooking Course at the old venue. We are now at Trinity Farm Organics and hope to put a new set of pictures on this site very soon............As shown below - our fires were lit in the glade and we sat on tree stumps stirring our pots and ate al fresco.
Absolutely EVERYTHING was cooked outdoors by the guests on the day - they worked very hard and prepared a superb feast!
We began our cookery day with elevenses in the form of Honeycomb Yeast Pancakes and Banana Fritters. Our lunch menu included a whole Mozambique Malagueta Chicken, roasted in a large potjie pot, BBQ Bread on a Stick, South African Bobotie, Boerewors, African Sweet Potato Stew, Spicy Prawns, Spicy Filled Squash and we completed the day with desserts of Fruit Kebabs with Orange, Rum and Chocolate Sauce and Banoffee Pie.
Also included on this course was Spiced Bake Pot Bread, South African Bobotie and we didn't need a fancy kitchen or gadgets - this was outdoor cooking at its simplest - coals, a makeshift grill and several cast iron cooking pots.
We covered baking, roasting, marinating, grilling, cooking vegetables wrapped in foil and we got through 12 recipes that included seafood, meat and vegetarian dishes - and we ate the lot [eventually]!
